It is most of wonderful day of the year! Strawberry shortcake is wonderful dessert to share with family! This is similar to strawberry fraisier (French strawberry cake), and I replaced the pastry cream (mousseline cream) to white chocolate whipping cream to save some time.
I will write the recipe of mousseline cream in the other article. It is also very delicious.
Ingredients:
Cake:
5 eggs (separate to yolk and egg white)
56 ml vegetable oil
56 ml milk
70 gram sugars
80 gram flour
A pinch of cream of tartar
Whipping cream/filling:
1 cup of heavy whipping cream
1/4 cup of white chocolate instant pudding powder
1 Tbs powder sugar
Cake making steps
Step 1:
Mix yolks and sugar
Step 2:
Heat oil, milk in the microwave for 20 seconds, and mix with the flour.
Step 3: Beat egg white and cream of tartar at high speed, when it reach foam status. Add 25 grams sugar to egg white and beat the egg white to medium peak, and repeat adding sugar total 3 times.
Step 4:
Fold the meringue into batter, make sure it is fully folded but not over folding it. (The picture showed the batter is not fully incorporated yet) Bake the cake at 325 F for 25 minutes.
Step 5:
Assemble the strawberries and whipped cream.
